Herbert Edmondson- A passion for cooking!!!
“…Well I don’t know when this really started but, I always dabbled”
-Herb
I retired from a large corporation in 1995 with 28 years of service with lots of incentives, full pension & benefits. I was still a relatively young man at 48 who had to get a job. I took six months off and went crazy, climbing the walls.
“…I wanted a job that was going to be fun. Didn’t have to make a lot of money, just a little cash flow.”
Thus, the idea of a hot dog truck. It was something that was always in the back of my mind. I love people and could cook just a little, but figured all I had to make was chili. I can do that. Sell dogs & burgers and that was where I started working 11:00-3:00pm, my kind of hours. After seeing some of the same faces every day I knew I had to add variety, then came the sandwiches, salads, breakfast menus, and of course longer hours. I did not mind because what drove me was the response from customers of how good everything was, the fun atmosphere, that made me want to get creative & unique even more. There is nothing more rewarding than to see a customer come up with a big smile wondering what’s on the menu today knowing that it’s something appealing. The rewards that we get keeps me motivated, focused, happy, and content.
My new passion is smoking. Pulled pork, and smoked ribs. I have developed my own brine, rubs & sauces. I am a very hard critic of myself and I must say they are good.
This is by far the most rewarding thing I have ever done. I look forward to getting up and going to work every day. It’s fun in the truck because I’m blessed with the most incredible helpers anyone could ask for and my loyal customers keep us all happy and laughing.
I could go on, and on but you just have to come and experience it for yourself.
My motto: “Come once, I’ve got you. Guarantee you will come again with a friend.”
To all my loyal customers and fans
Thanks
Eat well
